Chicken and Spaghetti Squash Recipe


If I can make this then you can too.  My husband is the cook in the family and I tend to not be in the kitchen at all but I saw this posted the other day on facebook in one of those cute videos and I thought I can do that.  

Ingredients:
1 spaghetti squash
3 chicken breast
1 onion
4 garlic cloves
1 cup chicken broth
small container cherry tomatoes
bag of baby spinach
salt
pepper 

Prepare
Spaghetti Squash
-poke a few holes with a fork and microwave for 5 minutes.  Cut in half and scoop seeds out. 
-a touch of olive oil, salt and pepper and put face down on baking sheet.
-Bake 400 degrees F for 40 minutes

Skillet
-Cut chicken breast into chunks
-cook chicken in a little bit of oil, when done take out and set aside
-cook 1 Onion in skillet turning slightly brown then add in 4 diced garlic cloves
-add salt and pepper
-add cherry tomatoes that have been diced in half
-add chicken broth 1 cup 
Reduce for 20 minutes
-add prepared chicken
-add bag of baby spinach
Stir

When the spaghetti squash is done fluff and plate.  Scoop skillet contents on top and voila.. delicious.

Enough for at least 3 meals.

Fixate to the Rescue

As many of you know my good friend and dressage instructor Judy had a recent medical emergency in the family.  Her husband, Angus had bleeding in his brain and was rushed to the hospital where he stayed in ICU for over a week.  He is home now and recover at a very good rate.  But going through something so traumatic has made Judy want to change some things in their lifestyle.  She wants Angus to be all around more healthy and have a much better diet.  In comes the Fixate cookbook.

Today after I had a fantastic ride on Bella in this lovely 80 degree weather, I went up to the house and we went through my fixate cookbook and picked out recipes that were easy to make and that she thought Angus might enjoy.  We picked out enough to get her started and hopefully to get him eating super clean and healthy.

So in honor of the Whyte Family getting healthier with their diets I'm going to share one of my favorite recipes from this cookbook.

Pumpkin Muffins With Maple Cream Cheese



2oz. cream cheese
1 Tbsp. Pure maple syrup
1 Large egg, lightly beaten
1 cup -canned pumpkin puree
1 1/2 cups almond flour
3/4 tsp. baking soda
1 dash sea salt
2 Tbsp raw pumpkin seeds

preheat the over to 350 F.  Prepare 9 cups by lining with muffin tin liners  Combine cream cheese and maple syrup in a small bowl mixing well (set aside) Combine egg and pumpkin in a medium bowl, mix well.  Add almond meal mixture to egg mixture and mix till blended.  Spoon batter into each prepared muffin cup,filling a little less then 1/2 full.  Spoon about 1 heaping tsp. cream cheese mixture into the center of each muffin, then full the rest with remaining batter.  Sprinkle pumpkin seeds evenly.
Bake for 16-18 minutes or until golden brown and toothpick inserted into the center comes out clean.
Transfer muffins to rack and let them cool.

Eat and enjoy!  That's it.  And I know if I can do them you can do them too because I'm horrible in the kitchen.

Started my 4th week on the 22 Minute Hard Corp program by Beachbody and got to try Resistance 3 for the first time.  Can I say I loved it.  

So I have totally figured out what type of program I like.   Fast paced, body weight or lighter weights.  Doesn't take a long time to do the exercise but is pretty intense during the workout.  21 Day Fix, 21 Day Fix Extreme, and 22 Minute Hard Corp are my type of programs.  I really wanted to love The Master's Hammer and Chisel but I had a very difficult time finding the motivation to do the workouts because of the type of structure.  I may try it again this summer we'll see.

And the day starts with a wedding!




First I want to start the day off by saying congratulations to my very beautiful and lovely sister-in-law Allyn Rose on her wedding day.  No make that Allyn Oertel.  We were able to join her in this very joyous, and momentous occasion via Skype.  Got to love technology.  She married the very handsome Christopher Oertel in his homeland of Germany.  There is future date for a wedding that we can all attend in Germany for 2017.  


The wedding was on German time so we had to get up for a 5:30 AM to make it!  We all "dressed up"  At least the top half of everyone did.  I think my little hat thingy really pulled it all together for me.   It was very nice being able to see the entire ceremony.  I will say it was different that what I'm use to here in the US and I think I missed a few things in translation, but it was lovely and Ally looked so happy that I couldn't help but smile through the whole thing.  So again congrats to the Bride and Groom.

Now I wasn't quite ready to get up and at it after the wedding so I wiped off my lipstick and went back to sleep for another hour or so.  The furbabies really don't let me sleep past 7:30 so I was up and feeding everyone and getting ready for my day.  I am on week 3 of the 22 Minute Hard Corp program and today it was Resistance 1.  So I made myself an energize drink from the Beachbody Performance Line and pushed play and got it done.  It always feels great afterwards.  There are times when I just don't want to do it.  But every time I make myself push play and push through a workout I feel so much better. And I think it sets the tone for the rest of the day.


After having a good workout I took the puppies outside for a little playtime.  I am watching my brother's dog for the week and she and my Kia have really bonded and love playing and chasing one another.  Hmmm is it time for another dog?!  Then it was off to work for the day at the Spa.  I love my job and saw some new clients and some clients that have been seeing me for years and had a great time.  So in closing the day started off with a bang and just kept on going!

From sluggish to a fabulous day.



This morning I posted about my over indulgence yesterday from Easter causing some sluggishness.  And I wasn't sure if I was going to just lay in bed and enjoy a slow start to the day or get up and get it done.  If the photo above is any indication then you know that I got up and got moving.  I decided this morning that I need to do the cold start warm up for the 22 Minute Hard Corp before I really got into the workout.  This was a nice choice.  My body slow started waking up and by the time I started Cardio 1 I was ready.  So, I completed cold start, cardio 1 and core 1.  I will say that I felt much better after I got my workout done and it set the tone for the rest of my day.



I then went down to the barn and had another great and I mean great lesson on Bella.  There were a few funny moments in the lesson such as the time Judy told me to keep my hands down by Bella's withers.  I can't do that, my arms are to short and my torso is to long.  I tried to follow her instructions but then I had to stop and tell her I physically can't do what she was asking.  We had a good laugh because Judy has the opposite problem her arms are long and her torso is short, she would have found that very easy.  After we made a few adjustments for my body type things just got better and better.  So proud of my Bella girl for giving me her all again today.

After my great ride I ran to the store and bought a few things to meal prep for the week.  As you know from previous post I have really been on a salad kick.  Still on it.  And these salads are delicious.  I also decided to make cauliflower pizza.  I haven't made it in such a long time but it is pretty yummy.  So meal prep got done and I made the very yummy pizza (recipe in the recipe section of this blog).  Now I'm ready to sit down and relax with my hubby before we have a super early morning skypeing with his sister in Germany because tomorrow she gets married!!  So excited for her!  Wishing her the best here in the US!

Cauliflower pizza Yummy for my tummy!


Today I made cauliflower pizza.  If you haven't tried it you should.  It's actually pretty yummy and not that hard to make.  And I can say that because I am not that good in the kitchen.  I will also say that I'm horrible at measuring things so honestly I do a pinch of this and a dash of that but I will try to give you accurate amounts.

Here is the ingredient list for the dough

1. medium size head of cauliflower- preferably organic
2. dash of koser salt
3. 1/2 teaspoon dried oregano 
4. 1/2 teaspoon dried basil
5. 1/2 teaspoon garlic powder
6. about 1/4 cup or a little more Parmesan cheese
7. about 1/4 cup or a little more mozzarella cheese
8. 1 egg

-preheat the over to 450 degrees while mixing everything.  If you have a pizza stone then feel free to throw that in the oven while your preheating

-cut your cauliflower into florets you really don't need the stems.  Blend or food process florets into a little rice like bits
-microwave cauliflower rice bits for 4 minutes
-let cool then put cauliflower bits into a towel and ring it out.  A lot of water will come out, try your hardest to get as much moisture out as possible this will help with the finished product
-mix all the ingredients with your hands in large bowl. 
-spread on parchment paper and form pizza shaped dough
-slide into pizza stone or baking sheet and cook for 10-15 minutes
-add sauce and cheese and any other toppings and bake for another 8-10 minutes

How I start my day. Everyday!

My Food Prep is boring but who cares!


I think it is really important to set yourself up for success.  And one of the best ways to do that is to prep some food for the week.  It doesn't always have to take a ton of time.  Sometime it does if you are making more elaborate meals or making a few different options.  But for me lately it has just been a super delicious salad.  Yep that's been it.  A salad that pretty much has it all.  So here is what I've been doing.  And don't worry these aren't all for me.  One of my co-workers likes my prep foods so she pays me for a few lunches a week.  So she has been on a salad kick with me!

3 different bags of greens.  (most of the time whats on sale)
chickpeas (rinsed)
3 different bell peppers (orange, red, yellow)
Turkey breast
Feta Cheese
cucumbers
Hard boiled egg
avocado

Well balanced and delicious!

Shakeology Chocolate Pancakes




I made these this morning and they were delicious.  I  make enough for the week and put them in the fridge for a quick snack on the go!

2 Scoops Chocolate Shakeology
3 eggs
1/2 cup rolled oats (not cooked)
1 banana
1 teaspoon Baking powder
1 teaspoon Vanilla extract
1/2- 1 cup Almond milk

Toss everything into the blender and blend then cook like you would your regular pancake mix!

So again I will admit that I pretty much just eye everything and it turns out great everytime.  Makes around 12-14 pancakes.

Chocolate Avocado Pudding

Here is one of my favorite recipes when I'm craving chocolate and I'm really trying to behave myself and eat as clean as possible.


2 Large pitted Avocados

1/2 cup unsweetened cocoa powder or 1 scoop of Chocolate Shakeology
(if you use the cocoa add 2 teaspoons of agave or maple syrup)

1/3 cup coconut or almond milk

1 teaspoon vanilla extract

1 Pinch ground cinnamon

Dash of Salt

Throw everything into the blender.  Blend until smooth.  Set in fridge for about 30 minutes to cool.  Then enjoy!

I will be honest and say I really don't measure anything anymore.  I just throw it all in and blend and add more almond milk if I want it more like mousse or less if I want it more like pudding.
